Chimichurri is an uncooked sauce used primarily on grilled meat, but don’t limit yourself. While chimichurri is a classic accompaniment to any asado, it is also used as a condiment for almost any meat dish in Argentina, from choripán to meat empanadas. Its fresh and vivid flavour will magnify the taste of any meal. Use it however you like, as a side or marinade.

Important note, don’t forget to check your teeth after devouring it. The herbs like to get everywhere.

And to tell you the truth it is incredible. In Argentina they say that a bbq without chimichurri and without criolla sauce is not a bbq, and to be honest, we agree.

What makes the difference is the brunoise (a special cut), which is the Queen here. The oil calms the pungent flavor found in heavy vinegar and lemon mix; however, acidity cuts perfectly and smoothly through the fats in your eats. A really good ASADO is crowned with the unmistakable flavor of a Salsa Criolla.

In this beef empanada edition we are bringing you the original Argentinian beef empanadas. These handmade eats have hand-diced premium beef previously wood fire seared mixed with onion, spring onion and a secret (not so secret) mix of South American seasonings, packed into a flaky crust. It’s a gourmet treatment of a classic street food. They are crazy juicy so don’t wear white when eating them!

If you want to make it really authentic and have it like they do in the football stadiums, have it between a crusty bread and serve it with some chimichurri or criolla sauce which is what we call a ‘choripan’. The name choripan is literally the combination of chori (chorizo) and pan (bread).

You can serve your chorizo any way you want, but grilled over wood with homemade chimichurri is pretty hard to beat.

Research has shown that it is a natural food with an infinity of beneficial nutrients for health, specially Zinc and Iron. Now you know this, you can treat yourself to eating it periodically with positive effects on your health. This black pudding is very flavourful and it will add an element of substance and depth to anything you have it with.

Grill it and have it warm with your ASADO or slice it and eat it with your antipasto.
